- Coffee is picked every 17 days when cherries are bright red and between 18° to 20° Brix
- Pulped next day after picking with a traditional pulper and a “Zaranda”,a mesh that removes low-quality beans
- Double fermentation for 38 hours Washed 3 times
- Dried slowly over 10-15 days using a parabolic dryer then 25-40 days using a mechanic dryer
- Moisture content reduced to 10-12%
